Alu vadi(Stuffed colocasia leaves pinwheels)
This was a recipe which I was planning to make for a long time.I enjoy these very often when my colleagues bring these awesome snacks packed from their home.its a fabulous recipe for Vegans specially, packed with nutrition and flavors and even for non-vegetarians it will not let one feel the absence of meat.Alu means colocasia leaves in Marathi.The colocasia leaves here are stuffed with spicy chickpea flour and then steamed and finally seasoned.Because of unknown problem my stepwise pics seems to be deleted.But soon I am going to make these again so I promise to update the post.
- Colocasia leaves (10 to 12)
- Chickpea flour (2 cups)
- Ginger grated (2 tbsp)
- Green chilies(3 to 4 made paste)
- Asafoetida(1 tsp)
- Jaggery (molten around 1/2 cup)
- Salt (as per taste)
- Coriander powder(1 tsp)
- Cumin powder(1 tsp)
- Red chilly powder(1 tbsp)
- Tamarind pulp (3 tbsp)
- White sasame seeds(1 tbsp)
- Red chilies whole(2)
- Mustard seeds(1 tsp)
- Curry leaves(5 to 6)
- Make a paste of chickpea flour and all other ingredients.
- cut the vains from the colocasia leaves from top so the leaves look flat.
- Smear the chickpea mixture on the leaves.Now place another leaf on top.
- Repeat the process until the leaves (10)are stacked one after the other.
- Roll tightly to form a roll.Smear some more mixture on the roll so that it does not open.
- Steam these rolls for 20 to 30 minutes.
- Once cooked and cooled cut round thick disks from this roll.
- For seasoning ,Add 2 tbsp of oil and add the mustard seeds .When they splutter add the remaining ingredients .
- Add the Alu vadi or patra in the oil and shallow fry on both sides for a few minutes.
- Serve with tea.
