Eggs are considered to be a part of healthy breakfast throughout the world.It

should be included in the diet of kids as well as adults to start their day with

high energy levels.It is a protein rich diet which is very important for building

muscles and bones for the growing kids  and also help in repairing damaged

cells.This recipe will free you from the monotony of the same old egg breakfasts

like scrambled eggs or omelettes and besides  creative and pretty looking  these can

be completed with in 15 to 20 minutes time with little or no preparations.You don’t

even have to ransack your  kitchen cupboard or rush to the grocery store to get its

ingredients.

Ingredients

1.Eggs 4
2.Onions (1 cup chopped)
3.Green chilies(2 chopped finely)
4.Coriander leaves (5 to 6 chopped)
5.Salt (as per taste)
6.Baking powder (a pinch)
7.Ginger julienne finely(1 tsp)

Preparation

1.Scramble the eggs with all the ingredients.
2.Grease the muffin pans.
3.Add little batter in all the muffin pans and fill them 3/4th.
4.Place them on a baking tray filled with 1/2 cup water.
5.Bake them in a preheated  oven for 15 to 20 minutes till they are cooked from inside
6.Serve them sandwiched inside toasted brown bread slices or burger buns .Drizzle mustard sauce and tomato ketchup.
