gnocchi in red sauce

Gnocchi are a form of dumplings,which is a part of Mediterranean cuisine but it is popular in the whole Europe.It has a similarity with Rajasthani Gatte ki sabzi. Bu gnocchi can be made with or without eggs.It is cooked like pasta.This is my first attempt with gnocchi and I am sharing the recipe with you.I hope the quality will definitely improve with experience.You can make the gnocchis without eggs also.Add some baking powder in that case.You can make the gnocchis with a variety of sauces ,I tried a cononut sauce and red sauce variety.

Ingredients
Boiled potatoes 2 cups(4 to 5 potatoes) with 5 to 6 garlic flakes
Whole wheat flour or Refined flour(Maida) 2 Cups
Egg (1)
Salt(as per taste)
10 flakes Garlic finely chopped
1 cup of Tomato puree
Kashmiri chili powder (1 tbsp)
Basil leaves(4 to 5)
parsley (1 bunch)
oregano(1/2 tbsp
grated cheddar and mozarella (1 cup)
1 cup fresh cream or milk

  • Make the Gnocchi:
    • Peel the potatoes and boil with salt and garlic as long as they don’t become soft.
    • Drain and pass through a strainer to ensure no lumps form.
    • Sift the flour into the bowl and mix while slowly adding the egg to make a thick dough . Set aside for 5 minutes to let the mixture cool slightly.
    • using well floured hands divide and roll the mixture into long rolls.
    • Boil the rolls in water.
    • once they are thoroughly boiled take it out and divide it into equal portions.

In the traditional gnocchi the dough is first divided into long rolls and then cut  into even sized pieces and make a ball like shape .Then the gnocchi s are boiled in water

    • Refrigerate for an hour.
  • Making the red sauce

  1. add some 2 tbsps of olive oil and some butter  in the pan
  2. add chopped garlic
  3. add chopped basil
  4. add tomato puree
  5. cook for 2 minutes
  6. add kashmiri chili powder and dried oregano
  7. add salt to taste
  8. add fresh cream 
  9. then add cheese
  10. Let the cheese completely melt
  11. Add the gnocchi to the cheesy  mixture
  12. mix for 2 minutes 
  13. decorate with parsley and serve
