These strawberry cupcakes are very close to my heart.prepared these during valentine’s day with strawberries mildly poached in white rum.The cakes were very soft and full of flavor from the strawberries.Then covered the cupcakes with a butter cream icing.I could not find my star nozzle for icing at the last moment and spooned the thick delicious icing on the top of these cupcakes.Though one of the ingredient was rum ,due to prolonged baking the alcohol amount decreases considerably and my daughter also munched on these goodies.

Serves : 10 cupcakes

Ingredients

  • 2 cups refined flour
  • 10 strawberries
  • 1 1/2 cup Water
  • 2 tbsp of rum
  • 2 eggs
  • vanilla essence
  • 1 cup sugar
  • 1 tbsp baking powder
  • 1/2 cup oil
  • 1/2 cup of milk

Preparations

  • heat the strawberry with water and sugar for about 5 minutes.
  • add 2 tbsp of rum or red wine.
  • Strain the strawberry syrup.
  • strain 2 cups of flour and baking powder and mix.
  • whisk egg yolk,vanilla and oil together.
  • Add 1 cup of the strawberry syrup
  • Add 1/2 cup of milk.
  • Fold the flour
  • fill 3/4th of the greased muffin cups
  • Bake at 200 degrees for 30 minutes.

Icing

  • Soften 100 gms of butter with a electric beater
  • Add 1 cup of powdered sugar,1 tsp of vanilla and mix
  • Add 1 cup of cream and beat together to form a smooth mixture.
  • Spoon on the cupcakes
