Pizza margherita recipe

This is a vegetarian pizza  invented by  Pizzaiolo Raffaele Esposito, Pizzeria Brandi’s chef in honor of the visit of queen Margarita. The queen wanted three prominent colors in the pizza present in the flag of Italy. Red in represented by tomatoes, green represented by basil and white represented by mozzarella. It is a quick easy pizza recipe with a pizza bread topped with homemade tomato sauce, tomatoes, basil and covered with white mozzarella.

Ingredients

Dough

  • 2 cups Refined flour
  • 1/4 cup warm water
  • 2 tbsp dried yeast
  • 1 tbsp sugar
  • 2 tbsp olive oil
  • Salt to taste

Topping

  • 4 to 5 tomatoes blanched, seeded and pureed
  • 4 tomatoes blanched cut into rounds
  • 8 to 10 cloves of garlic
  • 2 cups Mozzarella shredded
  • 1 tbsp Oregano
  • 1 tbsp chilly flakes
  • Salt to taste

Instructions

Dough

  • Dissolve sugar in lukewarm water.
  • Add dried yeast .
  • Stir to dissolve
  • Allow to sit for 15 minutes.
  • It will form a frothy mixture.
  • Add the frothy mixture to the flour and mix to form a dough.
  • Add olive oil and knead
  • Cover and allow to sit for an hour or two.
  • The dough will double in size.

Topping

  • Fry garlic in 1 tbsp of oil.
  • Add tomato puree and fry.
  • Add oregano and chili flakes.
  • Saute in low heat.
  • Add 1 tbsp of tomato ketchup.
  • Add salt to taste.
  • When the mixture loses water and leaves the sides of the pan.
  • Take off from heat.

Assembling

  • Make three balls from the dough
  • Flatten with a rolling pin to a thin circle.
  • Make depressions in the middle with fingers.
  • Smear the tomato sauce.
  • Top with tomato rounds, basil and cover with mozzarella cheese.
  • Grease the baking tray with butter
  • Bake for 15 to 20 minutes in a preheated oven at 180 degrees.
