Chilly egg curry
This is an Indo-Chinese style egg curry with a fusion of Indian and Chinese spices and flavors

Boiled eggs
halved

chopped shallots

garlic cloves mashed and chopped finely

red chilly powder

dark soy sauce

rice vinegar

corn flour

rice flour

green chilies shopped

spring onions for garnish

salt to taste
Instructions

Make a batter of cornflour and rice flour with water and pinch of salt.

Dip the boiled egg halves in the batter and deep fry in oil

Add a tbsp of oil in the wok.

fry chopped garlic.

Fry shallots.

Add red chilly powder followed by shallots and vinegar.

Add cornflour dissolved in water.

Add salt if necessary. Saute.

Add the deep fried eggs and saute till they become covered with the sauce.

Spice up with the chopped green chilies. Garnish with spring onions and serve.
