Ingredients

  • 5 to 6 Potatoes Medium sized
  • 2 cups refined flour
  • 1 egg [optional avoid incase making vegetarian]
  • A pinch of nutmeg
  • a handful of sage leaves
  • 1 tbsp of olive oil
  • 2 tbsp. of butter
  • 1 tsp grated garlic

Instructions

  1. Boil the potatoes till tender
  2. grate the potaoes.
  3. Pass through a strainer
  4. Add egg, flour,olive oil and salt
  5. Add grated nutmeg
  6. Knead into a soft dough
  7. Make small spindle shaped pasta out of the dough.
  8. Boil them in hot water for 10 minutes
  9. Strain and cool
  10. Heat butter in a pan
  11. Add sage leaves
  12. Toss the pasta in butter till they are light brown.
  13. Serve them warm with stir fried veggies
