Potato and cheese pierogies for breakfast
These are European dumplings filled with mashed potato and cheese which are boiled and fried in butter
Dough

4
cups
of flour
-
2
tbsp
of cream or sour cream

egg
-
1/4
th cup milk
-

tsp
salt
-
Warm water as needed
Filling
-
500
gm boiled potatoes
-
1
cup
cheese
-
1
tbsp
chili flakes
-
1
tbsp
coarsely powdered black pepper
-
chopped spring onions
-
1
tbsp
grated garlic
Seasoning
-

tbsp
butter
-
1
cup
chopped onions
Filling
-
Boil potatoes till tender
-
Strain water and wipe
-
mash them till smooth in a grinder
-
Add salt ,pepper ,grated garlic and chili flakes and mix
-
Add grated cheese and mix
Dough
-
Mix all the ingredients of the dough flour,cream,salt,egg together .

Add water
-
form a soft dough
-
dust with flour if required
-
Cover and keep
Dumplings
-
Roll the dough into a thin sheet
-
make small disks with cookie cutter
-
place a spoonful of fillings at the center
-
Close the disk with fingers
-
make pattern with fork
-
brush with egg wash
Boil and season
-
Boil these pierogees in water till they float on the surface
-
In a pan heat two tbsop of melted butter
-
fry onions till crisp
-
Add these pierogees and saute till light brown on both sides
-
Serve with any cheesy dip or sour cream
