Pav bhaji is a street food in Mumbai and other parts of Maharashtra.It is quick snack or a whole meal.It is nutricious and very popular among children.You have to serve this paste of mashed cooked vegetables with breads or buns and within second the plate is clean.One can make this dish with one's own choice of vegetables.

For The Bhaji

Spices
1/2tbspfennel powder
1/2tbspturmeric powder
1tbspof kashmiri chili powder or paprica powder
1/2tbspof cumin powder
1/2tbspof coriander powder
1/2tbspof dry mango powder
1/2tbspof all spice powdergaram masala
[pav bhaji masala is blend of all the above spices which can be procured from any indian store if you are living outside India or you can use your choice of spices.]

Vegetables
3/4cuproughly chopped onions
1/2cupchopped capsicum
1 1/2cupsfinely chopped tomatoes
1/2cupgreen peas
1 1/2cupspeeled potatoes
2tbspfinely chopped corianderdhania
1/2cupcarrot
1/2cupmixed sprouts
1/2cupcauliflower
1cupgrated tofu
1tbspof ginger garlic paste
For The Garnish
2tbspchopped corianderdhania
1tbspof lemon juice
1tbspgrated tofu
1.lemon slice
2tbsp Butteroptional
Instructions
Preparation
1.Boil the vegetables including onions and tomatoes with little turmeric and salt in pressure cooker.
2.In a wok add 1 tbsp of oil and add chopped onions and ginger garlic paste.
3.when it is golden add all the spices.
4.fry the spices and add all the vegetables .
5.cook the vegetables till they all mix together.
6.Mash the vegetables with some tool or after it cools down mash the vegetables with hand blender.
7.Continue to cook until the evegetables leave the sides of the pan.Add grated tofu and mix.
