Gluten free food is always the priority while cooking for home and these rice dumplings are the best. They are gluten free, moist and tasted great with minced pork filling. I used a mixture of rice flour and Thai glutinous rice flour, which makes these dumplings soft, chewy and gives a nice glaze after steamed.

250gm minced pork
2finely chopped onions
2green chilies finely chopped
1tspginger garlic paste fresh grounded
5clovesof garlic finely chopped
1spring onion green part finely chopped
Kosher salt as per taste
1tsplight soy sauce
1/2tspblack pepper grounded
1tspdark soy sauce
1tspapple cider vinegar
1tsprice wineoptional
Ingredients for wrapper
2cupsof rice flourany rice
1/2cupof glutinous rice flour
2tbspof sesame oil
1cupof hot watermore if required

Instructions
Preparation (stuffing)
Mix everything together
Give the minced meat a nice massage so that everything comes together like a dough.
Make small balls and keep them ready for stuffing
Preparation (wrapper)
Mix the ingredients of dough together with hand.
Add the boiling or hot water slowly.
Mix everything with a spatula.
If you have a wooden masher, try to mix with that as the mixture will be hot.
Break any lumps formed.
After sometimes everything will come together as a sooth moist dough.
If it's very soft, add some more flour, so that the dough is easy to handle and not very sticky.
Making the dumpling
Dust some rice flour on the wooden rolling board.
Make a small ball from the rice dough.
Flatten it with rolling pin.
Place the stuffing in the center of the flattened dough.
Close it with fingers gently.
Steam in a steamer for 15 to 20 minutes.
Sprinkle roasted sesame seeds and chopped spring onions.
