Potato noodles
These are gluten free handmade potato noodles tempered with chili oil

Cook Time 20 minutes
Noodles

4 to 5
potatoes boiled till tender

1/4
cup
tapioca flour or potato starch
-
salt to taste
Tempering
-

tbsp
of sesame oil
-

garlic finely chopped.

tsp
chili flakes
-
1
sprig of rosemary
-
1
tbsp
of honey
-
1/2
tbsp
of freshly ground black pepper

Peel and boil potatoes till tender soft
-
mash them smooth.
-
grind in a mixer if want to be quick.

mix tapioca flour and salt.

make a sticky dough.

Refrigerate for an hour to make it firm.

Cut into small balls and roll into thick noodles.

boil them till they float in water
-
Spread them on a plate.

heat sesame oil
-
add garlic and chili flakes and fresh rosemary.

pour the hot oil on the noodles and mix.

Add honey and mix of you like it sweet.

sprinkle some black pepper.
