These are gluten free handmade potato noodles tempered with chili oil

Noodles

  • 4 to 5 potatoes boiled till tender
  • 1/4 cup tapioca flour or potato starch
  • salt to taste

Tempering

  • 2 tbsp of sesame oil
  • 2 garlic finely chopped.
  • 1 tsp chili flakes
  • 1 sprig of rosemary
  • 1 tbsp of honey
  • 1/2 tbsp of freshly ground black pepper

Instructions

  1. Peel and boil potatoes till tender soft
  2. mash them smooth.
  3. grind in a mixer if want to be quick.
  4. mix tapioca flour and salt.
  5. make a sticky dough.
  6. Refrigerate for an hour to make it firm.
  7. Cut into small balls and roll into thick noodles.
  8. boil them till they float in water
  9. Spread them on a plate.
  10. heat sesame oil
  11. add garlic and chili flakes and fresh rosemary.
  12. pour the hot oil on the noodles and mix.
  13. Add honey and mix of you like it sweet.
  14. sprinkle some black pepper.
