Japanese chicken curry with homemade curry roux

This is a hearty chicken curry similar to Indian chicken curry with homemade curry roux which you can store in refrigerator for sometime to be used immediately with curries

Ingredients

Main Ingredients

  • 1/2 kg chicken preferably boneless
  • cups chicken stock or water
  • 1/2 cup potatoes cubed
  • 1/2 cup carrots cubed
  • 1 cup onions chopped
  • 1 tbsp lemon rind
  • 1/2 tbsp ginger grated
  • 1 tbsp grated garlic

Curry powder

  • 1 tbsp cumin powder
  • 1 tbsp coriander powder
  • 1 tbsp cayenne pepper
  • 1 tsp turmeric powder
  • 1/2 tsp clove powder
  • 1/2 tsp cinnamon powder
  • 1/2 tsp cardamom powder

Roux

  • 4 tbsp of butter
  • 2 tbsp of flour
  • 3/4 th cup of water

Instructions

Instruction

  1. Mix chicken with vegetables, onion, ginger, garlic, salt  and lemon rind and stock and cook till tender
  2. Heat pan.
  3. Add butter
  4. Saute flour and the ingredients of curry powder and fry till form a brown paste
  5. Mix this paste in water.
  6. Add this liquid paste in the chicken and vegetable mixture in batches and mix.
  7. Cook for 15  to 20 minutes in low flame.
  8. Serve hot with rice.
