Japanese rice omelet

Omurice recipe

Omurice is a inverted scrambled omelette covering a bowl of chicken fried rice . It is a modern Japanese fusion dish which is quite popular in Asian countries outside Japan. Omurice, or Omuraisu as it’s pronounced in Japan is a combination of omelet and rice.

Fried rice

  • 1 bowl of cooked rice
  • 1/2 cup chopped onions
  • 1/2 cup small dices of carrots
  • 1/2 cup beans chopped small
  • 1 capsicum small diced
  • 4 to 5 garlic finely chopped
  • 2 green chilies finely chopped
  • 1 cup boneless chicken breasts chopped
  • 1 tbsp. soy sauce
  • 1 tbsp. tomato ketchup
  • 1 tbsp. red chili sauce


  • 4 eggs
  • salt to taste

Demi glace

  • 2 tbsp. honey
  • 1 tbsp. soy sauce
  • 1 tsp Worcestershire sauce
  • 1 tsp vinegar
  • 1/4 cup chicken stock
  • 1/2 tbsp. corn starch



Fried rice

  1. heat oil
  2. fry garlic and onions
  3. Fry veggies on high heat.
  4. Add the sauces and stir
  5. Add chicken and mix
  6. Add rice and quickly mix every thing on high heat
  7. Sprinkle spring onions and green chilies.
  8. transfer this rice to a oval shaped  bowl.
  9. Invert this bowl on a  serving plate.


  1. Beat 4 eggs  with salt
  2. Heat 1 tbsp. oil in a wok
  3. When the oil is heated pour it off from the wok and wipe it with a cloth
  4. pour egg and quickly scramble the center with a pair of chop sticks
  5. bring both the sides together and fold forming a oval.
  6. flip it before becoming brown and place on the rice
  7. Make a slit on the center of the omelet and let it cover the rice inside out

Demi glaze

  1. Heat honey and the sauces together to caramelize
  2. Add vinegar and salt if required
  3. Add the corn starch dissolved in water and our on the omelet.
  4. Serve hot
