Pineapple chicken salad

It is a sweet and sour chicken salad creamy with mayo and crunch added by pineapple and lettuce

Ingredients

  • Boneless chicken 200 gm
  • Lemon juice 1/4th cup
  • Sugar 2 tbsp.
  • Vinegar 1 tsp
  • Sea salt as per taste
  • Fresh cream or sour cream 1/2 cup
  • Mayonnaise 1/2 cup
  • Dried tarragon 1 tbsp.
  • Green chilies 2 chopped into fine pieces
  • Red chili flakes 1 tbsp.
  • Pineapple pieces 1 cup
  • Onions chopped 1/2 cup
  • White pepper 1 tbsp.
  • tarragon dried 2 to 3 tbsp.
  • iceburg lettuce 1 bunch
  • Onion stocks or spring onions 1/4th cup
  • Tomatoes 1 chopped

Instructions

  1. Add the boneless chicken pieces to a bowl of cold water with a little salt and heat it until boiling for few minutes  and the chicken looks white and cooked.
  2. Turn off the fire and allow the chicken pieces to cool in the water.
  3. Take it out after sometimes and shred with hands
  4. Make a liquid marinate with lemon juice and sugar  and tarragon and marinate the chicken for 5 minutes.
  5. Make a dressing with white pepper ,sour cream and mayonnaise.
  6. Arrange the lettuce inside the bowl and on that add onions, green chilies and pineapple pieces.
  7. Add shredded chicken and on that pour the cream dressing.
  8. Sprinkle some tarragon chilly flakes and sea salt on top.
  9. Chill in the refrigerator for 30 minutes to an hour.
  10. Plate it.
