Kesar kulfi

It is a delicious preparation for the summer prepared by thickening milk and adding flavors to it. The main challenge here is to freeze the kulfi in the freezer as with the increase in the content of sugar it becomes very soft and difficult to freeze. You can add fruits syrups or even chocolate to make different varieties. It is absolutely simple and yummy preparation, especially on a hot summer afternoon.

Ingredients for kulfi

  • 1/2 liter Milk
  • 1 tsp. Saffron or Kesar
  • 1 tbsp cardamom powder
  • sugar as per taste

Ingredients for falooda

  • Basil seeds
  • Noodles
  • Rose syrup

Instructions

Preparation for kulfi

  1. Boil milk on a low flame till it is reduced to half.
  2. Add cardamom powder and saffron strands and boil for 5 minutes.
  3. Add sugar as per how much sweet you want.
  4. The more sugar you add the kulfi you get is softer.

Freezing

  1. pour the milk mixture in a kulfi in a plastic basket
  2. Add ice cubes and add a cup of salt.
  3. Salt helps to lower the temperature even further.
  4. Lower the temperature of your refrigerator by adjusting the regulator.
  5. Keep it overnight.

Preparations for falooda

  1. Soak sabja or basil seeds in water for 15 minutes.
  2. Boil some sevai or noodles in water, strain, and cool.
  3. Add 2 tbsp of sabja, rose syrup, noodles and make a mixture.
  4. Take out the Kulfi from the cans
  5. Pour over the kulfi and serve.
