Crispy batter fried bitter gourd smeared in beaten curd spiced with green chutney

Oil to fry
Mix all the ingredients and keep aside.

*Method*

Peel Karela
-
Slit & remove seeds
-
Cut in rings
-
Apply salt and leave for 30 mins.
Method to coat karela
-
Wash Karela (salt applied )Twice
-
In a saucepan bring water to boil with little salt and add the washed karela.
-
After 10 min remove from flame, drain all water.
-
While hot, add the karela rings in above dry mixture and toss it until all the rings are well coated, keep aside.

Fry this coated karela until crisp.
Method to assemble

In plate place the Fried Karela.

Top with Curd, little tamarind and mint chutney
-
Sprinkle black salt, Red chilli powder, Roasted cumin powder, chaat masala and salt to taste.

Add remaining Tamarind and mint chutney followed by curd.

Garnish with chopped coriander leaves and Barik sev and serve.
