Egg chilly curry

The Indianised version of Chinese food also known as Indo-Chinese food dates back to the time when Chinese migrants settled in Kolkata erstwhile Calcutta.Their cuisines undergone significant changes since then to adapt to the local taste ,flavors and weather conditions. Along with the popular Chinese ingredients like Soy sauce and vinegar ,the Indian ingredients sometimes added are cumin powder, red chilly powder and even curry leaves, which add a unique dimension to the dishes.
In Kolkata ,there is a place called Tangra , for authentic as well as Indian Chinese fusion dishes prepared by Chinese community settled here.Apart from that,all over India in dhabas,college canteens and hotels regional Chinese cuisine is served which changes flavors like the regional cuisines of India .The dishes like Chicken manchurian, Veg manchurian is extremely popular among the masses apart from fusion dishes like triple Schezwan rice. In this post I share such a popular Indo-Chinese dish called Egg chilly or Chilly egg curry.

Ingredients

  • 5 Boiled eggs (halved)
  • 1 cup chopped shallots
  • 4 to 8 garlic cloves mashed and chopped finely
  • 1 tsp red chilly powder
  • 1 tbsp dark soy sauce
  • 1 tsp rice vinegar
  • 1/4 cup corn flour
  • 3/4 cup rice flour
  • 4 green chilies shopped
  • spring onions for garnish
  • salt to taste

Instructions

  • Make a batter of cornflour and rice flour with water and pinch of salt.
  • Dip the boiled egg halves in the batter and deep fry in oil
  • Add a tbsp of oil in the wok.
  • fry chopped garlic.
  • Fry shallots.
  • Add red chilly powder followed by shallots and vinegar.
  • Add cornflour dissolved in water.
  • Add salt if necessary. Saute.
  • Add the deep fried eggs and saute till they become covered with the sauce.
  • Spice up with the chopped green chilies. Garnish with spring onions and serve.
