Best red velvet cake recipe with lemon butter frosting

Birthdays are meant for celebration. Aren’t they ? and I always love to bake my own birthday cake to be shared with friends and colleagues.This time I tried the Red velvet cake and it turned out to be gorgeous and was liked by all. Pundit Jawaharlal Nehru ,the first prime minister of India once quoted that “Birthday is one step forward towards our death,so why celebrate it?” But I think every one enjoys growing up and I enjoy growing old too.At 38,I feel I am more matured and prepared to handle the hurdles of life .Life is a journey of eternal learning ,so enjoy every moment to the fullest.

The traditional red velvet cake has cream cheese frosting but I tried this lemon butter  frosting as cream cheese was not in my pantry at that moment.

Following are the ingredients for 1 Kg sponge cake

Dry Ingredients

1.Refined flour 230gm
2.30 gm powdered sugar
3.Baking powder 1 tbsp
4.Baking soda 1/2 tsp

Wet ingredients

  1. condensed milk (1 tin)
  2. vanilla essence (1 tsp)
  3. oil or glycerine (2 tbsp)
  4. Liquid food color ,red(2 drops)
  5. Milk 100 ml
  6. Butter unsalted 100 gm

Lemon buttercream icing

Ingredients

  1. 2 tbsp lemon juice
  2. 1 tsp lemon zest
  3. 100 gms butter
  4. 200 gm sugar
  5. 100 ml condensed milk

Method

  1. Soften butter by beating it at speed 1
  2. Add sugar and beat.
  3. Add condensed milk and beat till fluffy and stiff peaks.
  4. Add lemon juice and lemon zest and beat lightly.

Method

1.Preheat the oven at 200 degrees Celsius
2.Sieve the flour,baking powder and baking soda.
3.Grease the baking tin well wit butter.
4.Sprinkle flour onto it and tap.
5.In a big bowl soften the  butter with an electric beater.
6.Add the powdered sugar and blend it well
7.Add gel and condensed milk and beat continuously for 7 to 8 minutes.
8.Add milk and beat at speed 1.
9.Add glycerin and vanilla essence.

10.Add flour and beat for 5 minutes
11.Bake at 180 degrees for 45 mins.

12.Cut the cake into two equal halves and soak each half with sweetened sugar water.

13.Apply the lemon butter  frosting generously on the cake and place the other half on it.

14.Coat the whole cake with the frosting and decorate it as per your choice.
