Mango mutton curry(Kairi Kanda ma gosht)

My Secrets Out! After years of guarding my signature Mutton curry recipe, I’m finally sharing it with you! This is the one that’s won over my friends and family. This is a kind of fusion recipe of Bengali mutton kosha and Parsi Kairi Kanda ma gosht, in which the mutton is cooked with raw and ripe mangoes
Ingredients
400 gm mutton
1/2 cup curd
2 onions chopped
3 tbsp of ginger garlic green chilies paste
1 tsp Kashmiri red chili powder
1 tsp turmeric powder
1 or 2 ripe mangoes chopped
1/4 cup oil
1 tsp cumin seeds
2 to 3 dry red chilies
1 tsp garam masala
1/2 cup milk
Preparation
1. Marinate mutton with curd, green chilies paste
2. Add a tempering of cumin seeds and red chilies
3. Fry onions and ginger garlic paste
4. Add red chili and turmeric powder
5. Add potato and raw papaya pieces
5. Add the mutton pieces and mangoes and cover cook for 30 mins
6. Add milk to the gravy
7. Sprinkle garam masala
7. Pressure cook or cover cook till mutton is tender
