Bahamian sweet potato

This is a very simple yet delicious dish from Bahamas which is an archipelago in the Atlantic ocean famous for its traditional seafood dishes.The main ingredient is sweet potato which is packed with nutrients,Vitamin A and rich in dietary fibers. This is a popular sweet dish which is taken during breakfast or as a dessert.This dish is traditionally made with pecans but I used walnuts and my daughter just loved it.
Ingredients
- 250 gms Sweet Potatoes peeled and shredded
- 1/3 cup sugar
- 1/4-cup butter (melted)
- 1/4 cup Walnuts(chopped)
- 1/2 teaspoon cinnamon
- 1/4 teaspoon dessicated coconut
- 1/4 teaspoon Vanilla
Preparation
- Add all the ingredients mix together and micro(full power) in a covered container for 15 to 20 minutes or cook in a pan till the mixture is caramelized and the sweet potatoes are tender and loses the water.
- Decorate with grated coconut and serve hot or cold with vanilla ice-cream
