This festive season during Diwali I decided to make these soft core chewy caramel chocolates.The kids love it but due to my hectic schedule in College I cannot make time.Holidays are a perfect time for making these sinful delicacies and definitely for making caramel,you do need to keep your head very cool.I hope you enjoy this recipe .there are many more methods for making caramel,but by trial and error I have found out that this one works best for me.
Ingredients
1.Cooking Chocolate bars
2.Sugar (2 cups)
3.Condensed milk(5 to 6 tbsp) or fresh cream(1 cup)
Tools
1.Plastic chocolate molds
2.Paint brush
3.Icing Bag or small spoon
Method
Preparing the caramel
1.Add two cups of sugar in a heavy bottom wok over low flame.
2.keep stirring.
3.Within 5 minutes slowly the sugar will melt into a brown liquid.
4.Keep stirring so that the liquid doesn’t get burnt.
5.Add cream or condensed milk.
6.The liquid will boil violently .be careful and keep stirring.It will turn into a chewy caramel.If you don’t want it to be very chewy and want a soft caramel you can add some more cream and mix.
7.Turn off the gas and let the mixture cool.
Making the chocolates
1.Melt the chocolate in a double boiler
2.You can create a double boiler at home by keeping a pot of boiling water and keeping the pot with chocolates on top of it.
3.The solid chocolate bar will melt into a thick liquid within 10 to 15 minutes.
4.Wash and wipe the molds dry.
5.Paint the inside of the molds with molten liquid chocolate.
6.keep the molds inside the freezer for 15 minutes or so.In the mean while make the caramel.
7.fill the caramel in piping bag or with a small spoon add into the molds.
8.Fill the molds with the rest of molten chocolates and freeze again for 20 minutes.
9.Take out the chocolates by squeezing the molds and serve.
