I prepared this cake for my daughter’s thirteenth birthday . It had to be eggless so prepared with curd. The curd and oil imulsification mixture along with baking soda in the dry mixture adds air bubbles to the cake batter and makes it soft and fluffy. Added chocolates and ferro rocher for decoration. Soaked the cake in chocolate and milk thin consistency sauce.
Ingredients
- 1 and 3/4 th cup Refined flour
- 8 tbsp cocoa powder
- 1 cup powdered sugar
- 1 cup curd
- 3/4 cup oil
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 cup milk
Soaking liquid
- 100 gm dark chocolate
- 1 cup milk
- 1/2 cup water
Ganache
- 200 gm chocolate
- 1 cup warm fresh cream
- 1/2 cup melted butter
Preparation
- Preheat the oven at 200 degrees
- Strain the refined flour ,cocoa powder, baking powder and baking powder
- beat curd with oil with a beater
- Add sugar and beat
- add milk and beat till it mixes uniformly
- fold the flour mixture in batches
- Bake the batter for 30 minutes at 180 degrees
Soaking and icing
- Heat the contents of the soaking liquid in microwave for 40 seconds or more to form a thin chocolate sauce.
- Keep your cake on a wire rack and soak with this sauce
- Melt 200 gm chocolate and add cream and melted butter to form a thick ganache
- Remove the cake from wire rack to the serving place
- Pour this ganache on top
- Decorate with chocolate truffles, ferro rocher,strawberries and whipped cream
