Whole wheat Carrot and Date cake

I am very fond of sweet dishes specially cakes and want to give it a healthy twist always so that I can eat it as much as I can without guilt.Refined flour and Sugar are two necessary evils while baking a cake.I had shared a recipe of chocolate cake with oats and dates.Today I am posting a recipe of carrot cake.I made it with whole wheat flour and dates.I used sugar for decoration but if you have a problem with sugar you can avoid it totally.Dates do contain quite a large amount of sugar which are much healthier and carrots add a sweet taste too..I did not use any butter or ghee etc.The cake is going to be very moist and fluffy.

Whole wheat Carrot and Date cake

Refined flour and Sugar are two necessary evils while baking a cake.This recipe prepares a cake woth whole wheat flour and dates.Dates do contain quite a large amount of sugar which are much healthier and carrots add a sweet taste too. No butter  or ghee etc.The cake is going to be very moist and fluffy.

Ingredients

for 1/2 Kg cake you will need:-

Ingredients

  • 1 cup Carrots (1 cup grated)
  • 1 cup Dates (seedless)
  • 3 Eggs
  • 1/2 tsp Vanilla
  • 1/2 tbsp Baking powder (1/2 tbsp)
  • 5 tbsp Whole wheat flour
  • 2 tbsp Vegetable oil

For decoration

  • 2 to 3 tbsp powdered sugar (2 to 3 tbsp)
  • 1 Egg white

Instructions

Preparation

  1. Grease a baking pan

  2. Strain whole wheat flour and baking powder in a bowl.

  3. Chop finely and Soak the dates in 1/2 cup milk for 10 minutes and mash them

  4. Separate and beat the egg whites till stiff.

  5. Add the carrot and dates with milk and beat for 1 minute

  6. Add egg yolks and vanilla and oil to it and beat again.

  7. Fold the flour into the wet mixture with a ladle and mix nicely until it forms a smooth mixture.Mix ,don't beat.

  8. If you feel sugar is less and you have no problem with sugar you can add 2 tbsp of sugar[optional]

  9. Add the mixture in the baking pan.

  10. Bake for 30 minutes in a preheated oven or microwave at 170 degrees.

Decoration

  1. Paint the top of the cake with egg white and sprinkle powdered sugar.

  2. Grill the cake in oven or microwave for 10 to 15 minutes at  150 degrees ,till sugar is caramelized. Mine.Mine required more time,the top should be golden brown.I was too impatient.

  3. Just cut and serve with tea ,coffee or whatever.Your guests will be impressed 🙂

  1. U didn’t mention abt the carrot in the method. U haven’t mentioned required degree for the oven. Please mention.
