Batata vada-Indian potato burger pattice

Vada pav is the most popular street food in Mumbai.People here ,are in love with “pav” which is a form of bread almost similar to burger buns and the food which are soaring in high demands are Pav-bhaji,misal-pav,vada-pav etc.Being originally from Bengal I am a born rice lover.But slowly and slowly I started developing the taste for  some of these street foods and their accompaniments.
The Hindi spoken here in the state of Maharashtra is also peculiar.One may find it weird too ,full of local Marathi words which has become a part of the dialect e.g “batata” means potatoes,”Kanda” meaning onions etc.
The batata vada is basically spicy and flavored potato fritters deep fried in oil which is crispy outside and soft ,juicy ,melt into the mouth form from inside.It is less spicy but full of flavors from curry leaves.One can eat it as a stand alone snacks with a spicy coriander chutney or ketchup or sandwiched inside the Bread or pav.

Ingredients

1.Potato 3 to 4 boiled and mashed.
2.Curry leaves (5 to 6)
3.Mustard seeds (1/2 tbsp)
4.Red chilies whole (1 )
5.turmeric (a pinch)
6.Coriander leaves ( 2 tbsp chopped finely)
7.Green chilies (2 to 4 finely chopped)
8.garlic  (2 to 3 cloves ) mashed roughly
9.Gram flour (1 cup)
10.Oil for frying (1 cup)
11.Salt (to taste)
12.Lemon juice (2 tbsp)

preparation

1.Add a tbsp of oil in the wok
2.Add mustard seeds ,when it splutters add curry leaves ,garlic and red chilly
3.Add  the boiled potatoes and stir with a spoon thoroughly.
4.Add green chilies and coriander leaves
5.Add salt and fry and cook till the mixture does not leave the sides of the pan.Add lemon juice and mix
6.Take out the cooked potatoes from the pan and make small balls from it.cool it
7.Make a thick batter with gram-flour and water to form a thick paste.Add  salt to taste.
8.Heat the oil for frying in another wok and add 2 tbsp of oil into the batter and mix.This will make the fry crispy.
9.Dip these ball one by one in the gram flour batter and deep fry till the outside coating is golden and crispy.
10.Serve with coriander chutney or dip.

Coriander chutney Preparation
1.Grind coriander leaves garlic ,green chilies and salt  according to taste and grind in the mixture grinder.
2.You can add 1 tbsp tamarind or raw mango if you want for sour taste.

3.In 1/2 tbsp of oil add mustard seeds and curry leaves  and fry and pour this oil mixture on the raw chutney and mix.This will add flavor to the chutney.
