Prawn Chilly curry noodles-inspired from Malaysian Laksa

This recipe is inspired from Malaysian soup Laksa. Traditionally it is made with rice noodles, prawns, chicken etc, this Malaysian curry laksa consists of sweet, sour, salty and spicy elements, But I did not have all the ingredients and  prepared it my way using Indian spices.So it became a fusion dish.I loved every bite or sip of it and my daughter kept asking for more .The only short coming may be it became very spicy which you can adjust according to your taste buds


1 Jumbo Prawns (6)
2.All spice powder (cinnamon,cardamom,anise,cloves,black pepper,nutmeg,black cardamom,Cumin)(or any local all spice powder)
3.Dried coconut powder
4.Red chilies (6 soaked in warm water for at least 1 hour)
5.Tamarind paste (1 tbsp)
6.Garlic (3 to 4 big cloves chopped finely)
7.Coconut milk (1 cup)
8.Basil leaves (4 to 5)
9.Lemon jest (1 tbsp)
10.Lemon juice (2 tbsp)
11.Egg (2 )
12.Green chilies (4 to 5 finely chopped)
13. Chowmein or egg noodles (1 packet boiled)
14.Carrots (julienne 1/2 cup)
15.Beans (1/4 th cup)
16.Capsicum (chopped into big pieces)
17.Onions (cut into quarters and the halved)
18.Sugar (1 tbsp)
19.Spring onions
20.Chopped tomatoes (1 cup)



1.Boil the prawns in 3 to 4 cups of water with salt.
2.Strain and keep aside ,once they are cooked.In the stock add the vegetables like carrot ,beans ,capsicum,green chilies and onions.
3.In the mean while Make a paste of red chilies ,tomatoes and  tamarind.
4.Add oil in the wok and add garlic ,red chili paste and stir.
5.Add salt and sugar to taste .
6.Add the All spice powder and dried coconut powder.
7.As the mixture leave the sides of the pan,switch of the gas and allow to cool.
8.Add 2 tbsp of this spice mix in the boiling water.
9.once it gets mixed thoroughly add coconut milk and keep stirring on low flame.
10.Add basil leaves ans cover cook for sometimes.This will keep the flavors intact and absorbed in

the curry.
11.Add the boiled noodles at this stage and cook .
12 At last add the prawns and cook.
13.for the eggs scramble,beat two eggs with a little salt and pour into hot water over the
flame.Continute to stir lightly until the eggs are cooked.
14.Decorate with raw onions,red chilies and scrambled eggs and spring onions and serve hot.
It is a tasty supe spicy and wholesome meal.
