Baking frenzy cakes Dessert

I always loved the Christmas celebrations.When I was a child I used to wait for my father bring a fruity Christmas cake on 25th December  from the market which me and my brother will relish and eat the whole day.This Christmas wanted to make a chocolate cake with orange flavor because chocolate goes well with orange.Generally I use fresh fruit with cream in between the layers of sponge cake but this time I used orange cream biscuits .I had some biscuits stocked in my kitchen cupboard for my daughter’s short breaks .Besides I used one tbsp of vodka because that was available at home.I am quite lazy in going out and buying things from market,unusual for a woman…..I know 🙂 You can use brandy or rum if available ,But Vodka also added wonderful flavors to the cake.It was yumm..

 







Ingredients
Make 500 gms of cake

  • 3 eggs
  • 100 gms of ready made Orange cream biscuits
  • 50 gms of chocolate cream biscuits
  • 5 tbsps of powdered sugar
  • 1/2 tsp vanilla essence
  • 1 tsp glycerine
  • 1/2 tbsp baking powder
  • 1 cup cashew nuts,black currents, tutti fruity,cranberry slightly tossed in wok over medium heat.
  • chocolate chips (a handful)
  • 100 ml fresh whipped cream
  • 1 cup of fresh orange juice
  • 1 tbsp of vodka or orange flavored vodka

 

Tools needed
1.Cake mould or baking tin
2.Piping bag for icing
3.Palate knife to apply cream
4.Nozzle for decoration
5.Bread knife for slicing the cake
6.measuring sppons
7.Mixing bowls
8.Electrical beater

Preparing the Icing
1.Beat the fresh cream topping with an electric beater for 15 to 20 minutes till it doubles up and
start forming stiff peaks.
2.if it is unsweetened cream add powdered sugar and mix.
3.keep it in the refrigerator.
4.Soak the dry fruits in 1 tbs of vodka




Preparing the oven
1.Preheat the oven to 180 degree celcius
Preparing the Baking tin
1.Grease a 500 gm cake mould or baking tin with butter.
2.Dust maida evenly on the tin.

Preparing the Dry ingredients
1.grind the biscuits into a fine powder
2.Sieve biscuits powder  and baking soda in a container with a strainer.
3.Measure sugar separately powder and keep.
Preparing the Wet Ingredients.
1.Separate the egg whites and egg yolk.
2.Beat the egg whites with an electric beater till stiff white snowy peaks are formed.
3.Add vanilla essence and glycerine to the egg yolks.
4.Add thr egg yolk mixture to the egg whites and beat till it blends completely .Don’t overbeat.
5.Add the powdered sugar and beat again till it forms a frothy mixture.

Mixing dry and wet ingredients
1.Take out the dry fruits from the vodka
2.Fold the biscuit powder  and dry fruits into the egg mixture with a spatula part by part so that it blends nicely.
2.No need to beat it.
Baking
1.Pour this mixture into the mould and keep it inside the  preheated oven.
2.Bake at around 180 degree celcius for 30 to 45  minutes.Check with a fork if it comes out clean
take the cake out.
3.Soak the cake with orange juice.You can mix 1 tbsp of vodka to the orange juice and soak the cake also.
4.Refrigerate the cake for 1 day and soak it again.Like this you can do it 2 or 3 times.
5.After that you can apply icing on the cake.

Icing the cake
1.Decorate the cake with whipped cream and grated chocolates.
