Instructions

  1. Grind the lemon grass with water to form a green puree.
  2. strain it to form a clear liquid.
  3. Blend all the ingredients with coconut milk in a blender to blend till the ice cubes are crushed.
  4. Add lemon juice and mix.
  5. If you like a thinner drink you may add some water.
  6. Serve chilled in glasses

This is a drink for coconut milk lovers. It tastes heavenly with the fragrance of lemon grass The combination of lemon grass and coconut milk is already popular in South East Asian soups and curries. Try the combination in the delicious aromatic summer drink to beat down the heat. With the addition of sugar and lemon juice it also has a perfect balance of sweet and sour taste and I was bowled over. I have a lemon grass plant growing in my balcony which was a good reason to experiment with this combination.

  • 1 to 2 tbsp. sugar
  • 6 to 8 ice cubes
  • chilled water as per need
