This is a folded omlette or rolled omlette popular in Japanese bento boxes. It consists of a mixture of eggs spiced with soy sauce and sweetened with mirin and sake traditionally, I used sugar. The omlette has a soft texture and everyone will love this dish. The process is simple but needs practice .Watch the video.
Ingredients
- 4 eggs
- 1/2 tsp soy sauce
- 1/2 tsp sugar
- 1/2 tsp white wine
- Salt as per taste
- 1 tbsp finely chopped carrots
- 1 tbsp finely chopped onions
- 1 tbsp finely chopped spring onions
Preparation
- Break the eggs in a bowl
- Blend the eggs in a mixer
- Strain the mixture to remove chaleza
- Chaleza is a strand which suspends the egg yolk inside the egg.
- Add the vegetables,soy sauce,wine,sugar and salt
- Heat oil in a pan
- Spread a ladle of the mixture
- Fold the omlette
- Shift the omlette to the centre
- Add anothe laddle
- fold again and repeat
- When all the mixture is exhausted,
- cut in thick slices and serve.
Tamagoyaki
Ingredients
