I have a funny story associated with this dish. I was going home from the University ,was very hungry and wanted to have some snack at the restaurant associated with the University guest house. I was craving for a bread omelet and when I saw this dish tomato omelet on the menu I was in ecstasy. When I receive the dish I realized that it was a vegetarian pancake sandwiched between two breads, very interesting. I was not aware of this traditional dish in Maharashtra where a tomato omelet is actually a chilla or pancake made of chickpea flour spiced up and served with breads ,a perfect vegetarian treat.

Ingredients
- 1 cup chickpea flour
- 1 cup chopped onions
- 1 cup chopped capsicum
- 1 onion chopped
- 2 to 3 green chilies chopped
- 1 tsp salt
- 1 tsp ginger paste
- oil for frying
Instructions
- Mix all the ingredients together
- Heat pan and drizzle oil.
- Add a ladle of batter.
- Flip and fry on both sides.
