This delicious treats, caramel apple empanadas, half moon shaped stuffed pastries, also called gujiyas in India packs a punch of nutrition along with carbs, making it a satisfying choice for iftar. Originating from Spain , empanadas offer diverse versions, each bringing its unique taste to the table during Ramadan feasts.

First lets start by making the caramel sauce by melting the sugar on low heat and adding butter and fresh cream till the mixture thickens and get light to medium brown in color. Next its time to make the apple filling , for which the apples are added to the same pan with water and a mixture o cinnamon and sugar powder. A pinch of salt and vanilla is added to enhance the flavor. When the apples are getting cooked lets make the pie dough by adding 50 gm of butter to 2 cups of flour and making a tight dough. freeze the dough for an hour. The dough is then divided into balls and rolled into discs. cut into small circles using a round mold. then the filling is kept in the center and the sides are sealed. Fry the empanadas in oil in low to medium flame. drizzle caramel sauce and serve.

Caramel sauce

  • 1 cup sugar
  • 1/2 tsp vanilla
  • 100 gm fresh cream
  • 50 gm butter

Apple filling

  • 3 apples chopped
  • 1 tbsp cinnamon powder
  • 1/4 cup powder sugar

Empanadas dough

  • 2 cup flour
  • 59 gm butter
  • 1/2 tsp salt
  • Water as required

Preparation

Caramel sauce

  1. Melt sugar on low heat
  2. Add butter and cream and stir
  3. Take out from the pan once it’s light brown

Apple filling

  1. Peel and chop the apples into small cubes
  2. Add the apples in the same pan and cook with little water
  3. Add vanilla cinnamon and sugar once the apple is cooked till it thickens.

Empanadas

  1. Make a tight dough with flour and butter
  2. Chill the dough in refrigerator for an hour
  3. Make small balls
  4. Roll into thin dish
  5. Cut circles with a metal round mold
  6. Place filling at the centre of the circle
  7. Close the circle into a half moon shaped stuffed pastry
  8. These empanadas are fried in low to medium flame
  9. Drizzle caramel sauce on them and serve .
