lemon pepper roast chicken
This new year ,I had been with my mom and brother and spent some valuable time with them.For the dinner I made
a whole chicken roast stuffed with rice,seafood and chicken mince infused with Indian spices.The
accompaniment was stir fried broccoli,potatoes and peppers.The chicken was tender an juicy with flavors
from black pepper and mild tangy from the lemon and curd it was marinated with.A simple dish to cook but
1 kg chicken cleaned
2 tbsp black pepper powder
2 tbsp lemon juice
1 cup curd
3 tbsp garlic paste
1 tbsp ginger paste
Salt to taste
1 tbsp chilly flakes
1/2 cup melted Butter
1 cup Basmati rice
2 cup chicken stock
1 tbsp ginger garlic paste
1 tsp turmeric
1 cup small prawns
2 boiled eggs
1 cup chopped onions
Preparing the stuffing
Heat 1 tbsp of clarified butter in the pan
Fry chopped onions
Add ginger garlic paste and saute
Add turmeric powder,red chilly powder and all spice
Add prawns ,all spice powder and prawns and saute
Pour 2 cups of stock and cook till the rice is tender.
Preparing the chicken
Marinate the chicken with all the ingredients for 2 to 3 hrs
Add stuffing into the cavity of the bird.
Stitch the cavity with thread.
Roast the chicken at 180 degrees for 1 to 1 and half hrs.
Brush with butter intermittently
Serve with the stir fired vegetables and potatoes.
