Omurice recipe | Japanese rice omelette

Omurice is a inverted scrambled omelette covering a bowl of chicken fried rice . It is a modern Japanese fusion dish which is quite popular in Asian countries outside Japan. Omurice, or Omuraisu as it’s pronounced in Japan is a combination of omelet and rice.

Fried rice

Ingredients

  • 1 bowl of cooked rice
  • 1/2 cup chopped onions
  • 1/2 cup small dices of carrots
  • 1/2 cup beans chopped small
  • 1 capsicum small diced
  • 4 to 5 garlic finely chopped
  • 2 green chilies finely chopped
  • 1 cup boneless chicken breasts chopped
  • 1 tbsp. soy sauce
  • 1 tbsp. tomato ketchup
  • 1 tbsp. red chili sauce

Omelet

Ingredients

  • 4 eggs
  • salt to taste

Demi glaze

  • 2 tbsp. honey
  • 1 tbsp. soy sauce
  • 1 tsp Worcestershire sauce
  • 1 tsp vinegar
  • 1/4 cup water
  • 1/2 tbsp. corn starch

Instructions

Fried rice

  • heat oil
  • fry garlic and onions
  • Fry veggies on high heat.
  • Add the sauces and stir
  • Add chicken and mix
  • Add rice and quickly mix every thing on high heat
  • Sprinkle spring onions and green chilies.
  • transfer this rice to a oval shaped  bowl.
  • Invert this bowl on a  serving plate.

Omelet

  • Beat 4 eggs  with salt
  • Heat 1 tbsp. oil in a wok
  • When the oil is heated pour it off from the wok and wipe it with a cloth
  • pour egg and quickly scramble the center with a pair of chop sticks
  • bring both the sides together and fold forming a oval.
  • flip it before becoming brown and place on the rice
  • Make a slit on the center of the omelet and let it cover the rice inside out

Demi glaze

  • Heat honey and the sauces together to caramelize
  • Add vinegar and salt if required
  • Add the corn starch dissolved in water and our on the omelet.
  • Serve hot
