Aloo tokri chaat (Potato basket Indian savory snacks)

I had been to the food court of a mall and there I saw those beautiful baskets of potatoes displayed
on the chaat counter.I ordered the dish.It was tempting and mouthwatering.The next day I had to try
this at home as I will forget the taste of it.
The result was awesome ,hubby was not at home and there aren’t any leftovers for him to taste.It was really difficult ,I was struggling with my daughter to let me  take some photos .It is healthy ..you can make hundreds of variations out of it,changing the sauces and the spices.The potato baskets are like ready made canopies.they can be stuffed with veggies,corns or cheese or fruits,chicken  any thing..
At first I tried deep frying the potato basket but the shape was not coming up well.If any of you can come up with a better idea ,mention in the comments.
So I decided to bake it in a muffin cup and then deep fry because I wanted the basket to be crispy.This time shape came out well but the deep fried one definitely was tastier and more crispy.
I have included both in my recipe.Try whichever you like.

Makes 6 baskets
Ingredients

1.Potatoes(big 4 to 5)
2.Bunch of coriander leaves.
3.Garlic 4 to 5 cloves
4.Green chillies (2)
5.Tamarind (1/2 cup with seed or seedless) soaked in water
6.Sugar (4 to 5 tbsps)
7.Mixed sprouts(1/2 cup)
8.Potatoes (2) boiled and mashed
9.Beetroot,carrot grated (1/4th cup)
10.Mint leaves (6 to 7)

Preparations

Making the basket

1.Grate the potatoes through a fine grater.
2.Sprinkle some salt and mix it with the grated potatoes.
3.Take two strainers , a small and oother little bigger .
4.Arrange the grated potatoes in the inside of the strainer like a bow shaped and press it with another strainer to squeeze the juices.
5.take the bowl shaped raw grated potato ,give it a final shape with ypur palms and deep fry in the hot oil till crispy.
6.Alternatively,you can butter the muffin cups and line the muffin cups with grated potatoes and bake for 15 to 20 minutes in a preheated oven at 180 degrees.
7.deep fry the baked baskets.

Making the filling

1.add 1 tbsp of rock salt,dry mango powder or readymade chaat masala to the mashed potato mixture.
2.Add sprouts and mix.
3.Add chopped green chillies.

Making chutney

We need one spicy green chutney and a sweet and sour tamarind chutney.

1.Grind a bunch of coriander leaves with sal ,one green chilly and garlic into a paste for green chutney.
2.Boil the soaked tamarind in 1 cup of water and then strain it.
3.Add 1/2 cup of sugar in the tamarind pulp and reboil it till it has the perfect sweet and sour taste.

Making the final dish

1.Arrange the baskets in a plate.
2.Fill the basket with the above filling
3.Add a tbsp of coriander chutney
4.Add a tbsp of ramarind chutney
5.Add beated sweetened curd
6.Garnish with grated carrots and mint leaves .
Serve immediately 🙂
