This is a folded omlette or rolled omlette popular in Japanese bento boxes. It consists of a mixture of eggs spiced with soy sauce and sweetened with mirin and sake traditionally, I used sugar. The omlette has a soft texture and everyone will love this dish. The process is simple but needs practice .Watch the video.

 

Ingredients

  • 4 eggs
  • 1/2 tsp soy sauce
  • 1/2 tsp sugar
  • 1/2 tsp white wine
  • Salt as per taste
  • 1 tbsp finely chopped carrots
  • 1 tbsp finely chopped onions
  • 1 tbsp finely chopped spring onions

Preparation

  • Break the eggs in a bowl
  • Blend the eggs in a mixer
  • Strain the mixture to remove chaleza
  • Chaleza is a strand which suspends the egg yolk inside the egg.
  • Add the vegetables,soy sauce,wine,sugar and salt
  • Heat oil in a pan
  • Spread a ladle of the mixture
  • Fold the omlette
  • Shift the omlette to the centre
  • Add anothe laddle
  • fold again and repeat
  • When all the mixture is exhausted,
  • cut in thick  slices and serve.

Instructions

  1. Break the eggs in a bowl
