This is a very easy and quick recipe and very versatile to serve during any celebration as well as casual get together. It is a 4 to 5 ingredient recipe which needs only assembling and baking for 10 to 15 minutes. The main ingredient Yogurt is formed when one ferment the milk with bacteria which transforms the lactose in the milk to lactic acid which imparts the sour taste to the yogurt. You can also prepare the recipe with curd which is prepared by fermenting milk with lemon juice or a spoonful of curd or yogurt itself. This recipe can also be steamed instead of baking on water-bath. This is also a traditional Bengali sweet and is called “Bhapa aam doi”
What is the purpose of a water bath?
Water bath is used to prevent over heating mostly in case of baking dishes like cheese cakes and also to avoid curdling of milk ,like in this case when we are using a mixture of yogurt and milk. It retains moisture in the oven and prevent the cakes from cracking or burning at the bottom.
How do you use a water bath for baking?
Place your batter or mixture in a tray filled with water in the oven while baking.
Ingredients
- 1 cup of unsweetened curd or yogurt
- 1 cup of fresh cream
- 1 cup of condensed milk
- 3/4th cup of mango puree
- 1/2 tsp of vanilla(optional)
Preparation
- Preheat oven to 200 degrees Celsius
- Mix everything into a bowl.
- Beat with an electric beater lightly.
- Pour the mixture into ramekins
- Place in a tray filled with water.
- Bake at 200 degrees for 15 minutes or till the top is set.
- Chill for an hour before serving it.
