I made these beautiful pancake ice-cream sandwiches for Sunday breakfast, they just do not look awesome ,they taste delicious too.My weekend was delightful as I received this pack of 3 ice cream flavors from Brooklyn creamery. The box had got 3 flavors chocolate fudge brownie, Soho berry and Kulfi . Made these pink strawberry fluffy pancakes as stawberries are still in season in Mumbai. My whole family loved them.

The Brooklyn Creamery icecream has 12 delicious flavours which can give you a guiltfree indulgance everyday . It uses a special formulation which contains 60% lower calories than any regular premium ice cream brands, with no added artificial sweetener or white sugar. the sweetness comes from the natural sugar present in fruits ,chocolates or any other sweet ingredients required to prepare the icecream. A 120ml tub has only 89 calories that is almost equal to that of a slice of toast and the 445ml tub has only 329 calories. They are priced at Rs 65 for 120ml and Rs 250 for 445ml tubs.
Pancake Recipe
Ingredients
- 1 and 1/2 cup refined flour
- 2 to 4 tbsp strawberry syrup
- 2 eggs
- 1/2 tsp baking powder
- 1/4th cup milk
Filling
- 2 scoops of strawberry/kulfi flavor ice cream(445 ml tub from Brooklyn creamery)
- 2 scoops tub of chocolate ice cream( 445 ml from Brooklyn creamery)
Preparations
- In a grinder mix all the ingredients to form a smooth thick mixture
- heat butter in a non stick pan
- pour a laddle of batter.
- When one side is cooked ,flip and cook the other side till firm
- Makes 6 to 8 pancakes
- Let thm cool
- place 1 scoop of icecream on one pancake
- Sandwich with anothe pancake
- garnish with strawberries and enjoy
