This recipe is dedicated to FBAI California Walnut Month , walnut is a wonderful ingredient for preparing pesto which is a classic Italian sauce prepared with basil,pine nuts ,garlic ,olive oil and Parmesan cheese. Green garlic is another amazing ingredient which marks the beginning of spring and these green bunches can break the monotony and bring a flavor revolution in your kitchen .
Benefits of green garlic
Green garlic has significant health benefits according to ancient Ayurveda. According to Ayurveda a meal should contain at least 6 tastes(Rasa) for health benefits which are bitter(Tikta),pungent(Katu) ,sweet(Madhura) ,sour(Amla),astringent(Kashya) and salty(Lavana) and garlic contains 5 tastes among the above. Being rich in sulfur ,it helps in digestion and keeps the body warm. raw garlic is considered to be extremely beneficial for heart and also fights against cancer.
Benefits of Walnut
Both garlic and walnuts are classified as heat producing food in Ayurveda and are compatible .It keeps your body warm during cold. Walnuts are an excellent brain food and activate the brain cells and improve your memory and intellect.

Recipe Ingredients
- A bunch of green garlic(include more greens only 4 to 5 bulbs)
- Green chilli (1 or 2)
- Walnuts(a handful)
- salt to taste
- 1 tbsp butter
- Lemon juice (1/2 tsp)
- Olive oil (2 tbsp)
- 1/4th cup Parmesan cheese grated(optional)
- 250 gms/1 packet elbow macaroni
Method
- Boil macaroni with salt
- grind green garlic, green chilies, walnuts, salt coarsely into a paste.
- drizzle lemon juice
- Add a tbsp of olive oil and mix.
- heat butter in a pan
- saute 2 to 3 tbsp of pesto for a minute
- Add the macaroni and mix.
- Add grated parmesan
- Drizzle some olive oil and serve.
