Spinach Rice Indian Recipe

Spinach is a wonderful green-leafy vegetable and full of anti oxidants.It is also considered to be anti cancerous.Feeding spinach or palak to kids is a big challenge.So I decided to make this recipe palak rice on a weekend ,which is so wonderful and full of nutrition and my daughter just loved it.
Benefits of Spinach
Spinach has an extremely high nutritional value and is rich in antioxidants. It is a good source of vitamins A, B2, C and K,It is also rich in magnesium, iron, calcium and potassium etc..
It is anti-carcinogenic including breast, prostate and ovarian cancer. Spinach also boosts eye health and has strong anti-ageing properties.
A recent study found a bowl of spinach every day increases muscle efficiency.
Main ingredient
- Spinach(1 bunch)
- Basmati rice(3 cups)
- Garlic (9 to 10 cloves)
- Garam masala(cardamom,cinnamon,cloves) grounded
- Salt(as per taste)
- Green chillies(4 to 5)
Preparing the rice
- Soak rice for half an hour
- Add the rice in boiling water and cook till it is long and white
- The rice should not be too soft
- Strain water from the rice
Preparing the palak
- Mean while boil palak in a skillet of water with a pinch of salt for 2 mins
- Strain the water and grind it smooth in the mixed with garlic and green chillies
- Add a tbsp of ghee in the kadai
- Add 3 tbsp of oil
- Add garam masala powder and bay leaves till a sweet smell evolves
- Then add the grounded palak mixture and sauté for 5 minutes
- Add salt
- Add rice and mix thoroughly over medium flame till the mixture is dry and leaves the pan.
- Ensure that the rice does not become soggy
- Serve with curd raita
