Methi Rice

 

Methi is a green leafy vegetable used readily in India and is known for its medicinal properties.It is extremely useful for digestion and is good for diabetes not withstanding the fact that  it is little bitter to taste and may not be liked by kids.But my today’s recipe tastes good  and is healthy.You can prepare it on a weekday because it does not involve elaborate preparations.Try it.

Ingredients

  • Fenugreek leaves(1 bunch)
  • Basmati rice(3 cups)
  • Garlic (9 to 10 cloves)
  • Salt(as per taste)
  • Green chilies(4 to 5)
  • Tomatoes (1 chopped finely) optional

Preparation

  1. Soak rice for at least half an hour
  2. drain it and dry
  3. chop the methi leaves finely
  4. crush the garlic cloves
  5. in a wok add 2 to 3 TBSP of oil
  6. add garlic and fry
  7. add the fenugreek or methi leaves and fry on a low flame till soft
  8. add salt
  9. Add the chopped tomato and green chillies
  10. add the rice and stir it for 5 minutes
  11. measure water and add
  12. for 1 cup of rice add 2 cups of water(double the quantity)
  13. for 3 cups of rice add 6 cups of water 
  14. note:the same measuring cup should be used for measuring rice as well as water
  15. cover and cook till the water is fully absorbed and the rice becomes soft
  16. sprinkle lemon juice and serve.
