How to make tomato rice

Tomato rice is an excellent recipe you can make with leftover rice.It traditionally belongs to the city of the Nizam ,Hyderabad where tomato is considered animportant component.Because of the huge cultivation of red chilles in Andhra Pradesh the local cuisines are spicy and red colored with the use of red hot chili powder.But you can use a lesser spicy Kashmiri chilly powder if you want and make  the dish still look red hot and spicy by using red juicy tomatoes.

ingredients

1.Leftover steamed rice (preferably refrigerated)( 3 cups)
2.Tomatoes(3 to 4)
3.Mustard seeds(1 tsp)
4.Curry leaves(4 to 5)
5.Toor dal or Bengal gram dal(1 tsp)
6.Kashmiri chilly powder(1 tsp)
7.Vegetable oil(2 to 3 tbsp)
8.Salt(as per taste)
9.Garlic(2 to 3 cloves)
10.Garlic(1 clove crushed and chopped)
11.roasted groundnuts (a handful)

 

Preparation

1.Grind the tomatoes and garlic  into a fine paste)
2.Add 2 tbsp of oil in the pan.
3.Add mustard seeds ,when the splutter ,add curry leaves and toor dal.
4.Add the chopped garlic and a whole red chilly.
5.Add tomato paste and fry.
6.Add the salt and groundnuts and mix.
7.Add the boiled rice and stir till the flavors blend.
8.Continue to stir till the mixture does not leave the sides of the pan.
9.Serve hot with a vegetable or meat sidedish or simply curd.
