This is a quick chicken recipe full of flavor due to the addition of Mango.You can serve it as a side dish to fried rice or any flat breads. I recommend the mango should be sweet and sour and not too sweet.
Chicken mango stir fry
chicken cooked in chunky mango salsa
- 200 gm Chicken boneless
- 3 to 4 cloves Garlic
- 3 to 4 Green chilies
- 1 tbsp Dried basil
- 1 tbsp Soy sauce
- 1 tbsp Black pepper
- 1 tbsp Chilly flakes
- 1/4th cup Lemon juice
- 1/2 tbsp Sugar
- Salt (as per taste)
- 1 cup Capsicum
- 2 cups Onions
- 1 tbsp Ginger julienne
- 3 tbsp Oil
- 1 cup Ripe mango (sweet and sour chopped )
1.Marinate the chicken pieces with salt and lemon juice for 20 to 30 minutes
2.Add 1 tbsp of oil in the wok and stir fry the chicken pieces till cooked.
3.grind garlic and green chilies into paste.
4.Add 2 tbsp of oil in another pan and stir fry onion and capsicum.
5.Add soy sauce ,green chilies,red chilly flakes and pepper and salt to taste.
6.Add lemon juice and stir.
7.Add mango pieces and chicken.
8.Cook till mango pieces are blended into the dish.
9.Add dried basil leaves and ginger.
10.Add 1/2 tbsp of sugar and 1 tbsp of lemon juice.Cook till the mixture dries and capsicum is soft and cooked .
11.Serve hot with any flat breads or fried rice .
