Ice-Creamy Dahi vada (Lentil fritters in rich yoghurt and ice-cream sauce)

It was time for me to to return home from college suddenly my HOD told me that I have to judge some case studies presented by some Company Secretary intern students.Hot afternoon, and then I have to stay back, was not an welcoming thought at all and in addition to that I was tensed as I am accustomed to assess IT projects and have no experience in finance or law.But then the presentations were good and in the mid-afternoon break I got the chance of tasting these amazing Dahi vadas which were dipped in ice cream.I have forgotten actually whether there was actually any yoghurt or not but while recreating it at home I added ice cream to the yoghurt sauce and the dish was amazing and delicious.delicious. Dahi vadas are a North Indian snack which is popular in all parts of India.Lentil fritters are fried and dipped in yoghurt sauce and then tempered with spicy coriander
chutney and sweet and sour tamarind chutney.

Ingredients

1.White lentils (2 cups)
2.Fennel seeds (1 tbsp)
3.Ginger (1 inch)
4.Baking soda (1/2 tsp)
5.Salt (as per taste)
6.Broken cashewnuts(2 tbsp)

Green chutney

1.Corinader leaves (1 bunch)
2.Garlic (2 cloves)
3.Green chillies(2 to 3)
4.Salt as per taste

Tamarind chutney

1.1 cup of seedeless tamarind soaked in water
2.Sugar 1/2 cup or more as per taste

yoghurt sauce
curd 100gm
salt as per taste
sugar (2 to 3 tbsp)
vanilla ice cream (2 scoops)

roasted cumin powder 1 tbsp
roasted chilly powder 1 tbsp

Preparation

1.Soak the lentils in water overnight.Strain the water from the lentils.
2.Grind the lentils with fennel seeds and ginger into a smooth paste.Add baking soda and salt.If needed add little water.
3.heat ghee or oil in the wok.
4.Add a tbsp of batter and take out the fried fritters when done
3,Grind the green chutney ingredients into a fine paste.
4.Boil the tamarind pulp with sugar till it thickens
5.Blend the thick yoghurt with salt and little sugar.
6.Add vanilla ice cream to the yoghurt and mix
7.add the fritters in a bowl of warm water for 4 to 5 minutes.
8.after few minutes squeeze the water from the fritters one by one and add them to the yoghurt and ice cream sauce.
9.Add the green chutney and tamarind chutney.
10.sprinkle the roasted spices on top and serve chilled.
