Pineapple Chicken Salad

This is a healthy and light recipe which one of my  friend has quickly suggested to me. It is spicy, crunchy, juicy, sweet and sour  and delicious. It can be a one pot meal or a filling for a tasty sandwich. My sincere and hearty thanks to her(Viana) for this wonderful recipe which I modified a little according to the availability of ingredients and my convenience.
 

Ingredients

1.Boneless chicken 200 gm
2.Lemon juice (1/4th cup)
3.Sugar (2 tbsp.)
4.Vinegar(1 tsp)
5.Sea salt (as per taste)
6.Fresh cream or sour cream (1/2 cup)
7. Mayonnaise (1/2 cup)
8.Dried tarragon (1 tbsp.)
9.Green chilies (2 chopped into fine pieces)
10.Red chilly flakes (1 tbsp.)
11.Pineapple pieces (1 cup)
12.Onions (chopped 1/2 cup)
13.White pepper (1 tbsp.)
14 tarragon dried (2 to 3 tbsp.)
15.iceburg lettuce (1 bunch)
16.Onion stocks or spring onions (1/4th cup)
17.Tomatoes( 1 chopped)

Preparation
1.Add the boneless chicken pieces to a bowl of cold water with a little salt and heat it until boiling for few minutes  and the chicken looks white and cooked.
2.Turn off the fire and allow the chicken pieces to cool in the water.
3.Take it out after sometimes and shred with hands
4.make a liquid marinate with lemon juice and sugar  and tarragon and marinate the chicken for 5 minutes.
5.Make a dressing with white pepper ,sour cream and mayonnaise.
6.Arrange the lettuce inside the bowl and on that add onions, green chilies and pineapple pieces.
7.Add shredded chicken and on that pour the cream dressing.
8.sprinkle some tarragon chilly flakes and sea salt on top.
9.Chill in the refrigerator for 30 minutes to an hour.
10.Plate it.

    This is one versatile salad recipe Indrani, make mine with paneer and with chicken for hubby. It is really hot at the moment in Mombasa, and wholesome filling and nutritious salads are what I’m making often.
