Khandvi recipe

This is a easy quick Gujarati snacks which will test your patience a bit but will give you a delicious lip smacking dish. The chickpea batter is spiced and cooked and set on a cold greased surface and rolls made out of that.
Ingredients
- 1 cup chickpea flour
- 1/2 cup curd
- 3 cups of water
- 1 tbsp. grated ginger and green chili paste
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 4 to 5 curry leaves
- 2 green chilies
- 1 red chili
- 1 tsp asafoetida powder
- 1 tsp turmeric powder
- Chopped coriander leaves for garnish
Preparations
Making batter
- Strain the flour
- whisk the curd
- Add 3 cups of water
- Add salt and sugar
- Add ginger green chili paste
- Add asafoetida powder
- Add turmeric powder
- Strain the batter
Making rolls
- Cook the batter 15 to 20 minutes on low flame till it thickens
- Drop a spoon of batter on the kitchen surface
- If the batter does not stick to the surface the batter is ready
- With a spatula coat a greased plate with batter not too thin.
- Let it cool
- With a knife make vertical cuts
- Using your finger make rolls.
Seasoning
- Heat 2 tbsp. of oil.
- Add cumin seeds, mustard seeds
- Add curry leaves
- Red chili
- Pour on the rolls and toss
- Garnish with coriander leaves
