“Ever tried shirataki noodles?
These translucent, chewy noodles are made from the konjac yam—a vegetable grown in Japan and East Asia. They’re low-calorie, gluten-free, and super easy to digest. I cooked mine with loads of winter veggies—spinach, mushrooms, beans, carrots, and beets—finely chopped with garlic.
The shirataki noodles are washed and boiled first to get that perfect chewy texture.

Next, I roasted white sesame seeds and blended them with ice to make a quick homemade tahini.
A tablespoon of olive oil goes into the pan, garlic and veggies get sautéed, then in goes the tahini with a splash of water. Finally, add the noodles, toss everything together, and serve hot.

Healthy, comforting, and packed with flavor!” 🍜✨
