These are moist and droolicious chocolate cakes full of chocolate flavor and health.They are egg-less and dairy free and even sugar free.I have used honey instead.They look divine and I bet that you cannot stop eating at one.The lemon juice ,baking soda and olive oil are imulsified together to form a frothy mixture which helps to pack air bubbles in the batter useful for raising the cake.Choco chips are used in the batter for a chocolaty taste and dairy free whipped cream is used as a frosting.
Vegan chocolate healthy cupcake
These are homemade dairy free cup cakes which completely melt in your mouth and full of chocolate flavor
Ingredients
- 1 and 1/2 cup whole wheat flour
- 1/2 cup cocoa powder
- 3/4 cup Honey
- 3/4 cup chocolate chips
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 1/2 tsp baking soda
- 1/2 tsp vanilla
- 1/2 cup water
Frosting
- 2 cup dairy free sweetened double whipped cream
- 2 tbsp chocolate chips
- 2 tbsp sprinklers
Instructions

Strain cocoa and whole wheat flour together

beat lemon juice ,baking soda and olive oil together .

Add honey ,vanilla and beat

Add water and mix

Fold in the flour slowly and beat at the lowest speed to form a smooth mixture.

Add the chocolate chips

Bake for 25 minutes at 170 degrees

Allow to cool completely before frosting

Beat the whipped cream till it doubles

decorate the top of the cake with a icing nozzle.Sprinkle chocolate chips and sprinklers
