Every mother all around the world is worried about the daily nutrition intake for her kids,specially during the time they spent in their school.Long time back when I used to teach in a school ,I used to see the real picture how the kids spent their lunch break.Most of them go to play leaving their snack boxes packed as it is in their school bag untouched.Some of them are clever enough to empty them in the bus by distributing the food generously among their friends during their return from school.
Among all these confusions I can see a confused helpless mother who is trying to pack nutrition and health into kids snacks with sincerity and love.This is a quick healthy snacks which is less complicated and full of flavor which most of the kids may like and will keep them full .The colors are a visual treat and are attractive to those fussy eyes.
Ingredients
1.Eggs (3)
2.1/2 cup beetroot grated
3.1/2 cup carrot grated
4.Coriander leaves (a handful)
5.Garlic (3 to 4)
6.chilly flakes(as per taste)
7.cumin powder(1/2 tbsp)
8.Salt as per taste
9.Ginger julienne(1/2 tbsp)
Preparation
1.beat 3 eggs separately with salt
2.Add cumin powder ,chilly flakes and grated beetroot.
3.Add ginger and grated carrots into another beaten egg
4.Add paste of coriander and garlic into the third egg.
5.Add 2 tbsp of oil in the non stick pan.
6.Add the egg with beetroot in the middle,spread it.
7.add the egg with the carrot surrounding it.
8.Finish it with the green egg mixture forming a green border.
9.cover and cook it for sometime or flip it over and cook.
10.Cut  it into pieces and pack them into snacks boxes.
You can serve it as a family breakfast with  bread toast.
