This is a fusion recipe which is inspired from various recipes, we have a number of traditional Indian recipes which uses the rice flour for making dumplings. But these dumplings are mostly sweet prepared during the festivals, or the harvesting season filled with sweetened coconut fillings. One of the rice dumplings with sweet fillings which are popular all over Maharashtra in India are called Modak.
The Tibetan Momo are also quite popular all over India which was one of my favorite street foods to devour when I used to visit my maternal granny’s place in North Bengal, which are savory dumplings made of thin wrappers made of refined flour with meat or veggies stuffing.
Another type of dumpling recently I got familiar with are Mandu, Korean pork dumplings with wrappers made of a mixture of flours like refined flour, glutinous rice flour and corn starch. They are a bit starchy. prepared them for 2 consecutive Korean popup meals at home. They were great loved by the guests.
But gluten free food is always the priority while cooking for home and these rice dumplings are the best. They are gluten free, moist and tasted great with minced pork filling. I used a mixture of rice flour and Thai glutinous rice flour, which makes these dumplings soft, chewy and gives a nice glaze after steamed.
Ingredients for stuffing
- 250 gm minced pork
- 2 finely chopped onions
- 2 green chilies finely chopped
- 1 tsp ginger garlic paste fresh grounded
- 5 cloves of garlic finely chopped
- 1 spring onion green part finely chopped
- Kosher salt as per taste
- 1 tsp light soy sauce
- 1/2 tsp black pepper grounded
- 1 tsp dark soy sauce
- 1 tsp apple cider vinegar
- 1 tsp rice wine (optional)
Ingredients for wrapper
- 2 cups of rice flour (any rice)
- 1/2 cup of glutinous rice flour
- 2 tbsp of sesame oil
- 1 cup of hot water (more if required)
- Salt to taste
Preparation (stuffing)
- Mix everything together
- Give the minced meat a nice massage so that everything comes together like a dough.
- Make small balls and keep them ready for stuffing
Preparation (wrapper)
- Mix the ingredients of dough together with hand.
- Add the boiling or hot water slowly.
- mix everything with a spatula.
- If you have a wooden masher, try to mix with that as the mixture will be hot.
- Break any lumps formed.
- After sometimes everything will come together as a sooth moist dough.
- If it’s very soft, add some more flour, so that the dough is easy to handle and not very sticky.
Making the dumpling
- Dust some rice flour on the wooden rolling board
- Make a small ball from the rice dough
- Flatten it with rolling pin
- place the stuffing in the center of the flattened dough
- Close it with fingers gently
- Steam in a steamer for 15 to 20 minutes
- Sprinkle roasted sesame seeds and chopped spring onions.
- Serve hot.
Pork sweet rice flour dumplings
Ingredients
