These are gnocchi styled potato pasta which are stir fried in butter and seasoned with herbs. Unlike Italy the origin of these handmade pasta is in Germany. This is a dish made popular by the Swabian region of Germany like the classic maultaschen. These are a great side dish to be served with meat and compliments the potato loving German soul. The word “Schupf” means rolling and “nudeln” means some dumpling. I prepared these for the German cuisine #potluck #wildasperagustable. Ingredients
- 5 to 6 Potatoes(Medium sized)
- 2 cups refined flour
- 1 egg [optional ,avoid incase making vegetarian]
- A pinch of nutmeg
- a handful of sage leaves
- 1 tbsp of olive oil
- 2 tbsp. of butter
- 1 tsp grated garlic
Preparation
- Boil the potatoes till tender
- grate the potaoes.
- Pass through a strainer
- Add egg, flour,olive oil and salt
- Add grated nutmeg
- Knead into a soft dough
- Make small spindle shaped pasta out of the dough.
- Boil them in hot water for 10 minutes
- Strain and cool
- Heat butter in a pan
- Add sage leaves
- Toss the pasta in butter till they are light brown.
- Serve them warm
Schupfnudeln
Ingredients

Instructions
