The Pahadi (meaning Hills) kebab recipe originates from Uttaranchal which is adjacent to the Himalayas.This is a handy recipe as it does not include marination but in case you want to prepare it with chicken chunks you need to marinate it for 3 to 4 hours in refrigerator.
Chicken Pahari (green meat balls)
Ingredients
- Chicken (boneless) cut into chunks 200 gm
- Ginger paste 2 tsp
- Garlic paste 2 tsp
- Green Chilli paste (3 to 4)
- Garam masala 1 tsp (All spice powder)
- Curd 2 tbsp(thick curd without water)
- Coriander leaves A bunch
- Mint leaves A bunch
- Black pepper coarsely ground (2 tbsp)
- Spinach 5-6 leaves(blanched)
- Lemon juice 2 tsp
Preparation
1.Make a paste of all the leaves(coriander, mint and spinach) and green chilies
2.Add the chicken pieces in the grinder along with the paste and just grind once at speed 1.The chicken should be only partially minced and partially intact.
3.Add all spice powder, curd and ginger garlic paste to it.
4.Preheat the oven to 200 degrees.
5.Make balls out of this mixture and pass them through skewers. Sprinkle Black pepper.
6.Bake and grill in oven at 180 degrees for 20 to 25 minutes, until the marinate dries up and the ball are little charred on the surface.
7.Brush some olive oil or butter if desired.
Chicken Tandoori(Red meat balls)
- Chicken (boneless) cut into chunks 200 gm
- Ginger 1/2 inch
- Garlic 4 cloves
- Red chilies whole (5 to 6) soaked in water
- Dried fenugreek leaves (optional)
- Butter or oil (2 to 3 tbsp.)
Preparation
1.add all the ingredients in the grinder and mix until the chilies are nicely integrated with the chicken.
2.Make balls out of the mixture and pass it through skewers .
3.Brush butter or oil on the balls and bake for 25 minutes in a preheated oven or 20 minutes on microwave combi grill mode.
4.Sprinkle lemon juice
Garnish the meat balls with onions ,coriander leaves ,lemon juice and boiled potatoes and serve hot with Tandoori rotis or any flat breads with fresh yoghurt dip
